Zucchini Casserole

3 medium zucchini, cute into small cubes

1 large carrot, sliced thin

1 onion, diced

1 cup sour cream

1 can cream of chicken soup

1 6-oz package stove top stuffing (chicken flavor)

1 stick of butter melted

Bring to a boil unpeeled diced zucchini and carrots.  Remove from heat and drain.  Mix onion, sour cream, and soup together.  Stir the melted butter into the package of stove top stuffing.  Reserve 3/4 cup of dressing for the topping.  Next, mix the zucchini mixture, sour cream mixture and dressing together and spread into a greased casserole dish.  Sprinkle the top with the reserved dressing.  Bake uncovered at 350 degrees for 30-40 minutes.
